With the help of expert fideuá chef José Manuel Navarro from Casa José Restaurant, right by Gandia beach, let’s first write up a shopping list. To start with, you'll need onion, garlic and tomato. Then, head to one of our fantastic fish markets and buy red prawns, langoustines and monkfish. In Gandia, fideuà is cooked in a fishy broth made from white fish and seafood, this is the secret to its great taste!

First, we need to sauté some of the ingredients to create a sofrito. We start by cooking the seafood, which is then set aside. Then, fry the chopped onion until it caramelises and add the garlic. Throw in the monkfish and finally the grated tomato.

Now we have the sofrito, it’s time to add the pasta, or fideos. In Gandia, it’s common to use type 4 when making fideuà, which are a little thicker than normal and have a hole in the middle. Now pour in the fish stock, or fumet, and simmer until the liquid evaporates. Carefully place the prawns and langoustines on top of the pasta. And there you have it!
